Apple and apricot pie
2 dl flour
1 teaspoon baking powder
2.5 dl sugar
100 g butter
3 eggs
dash of salt
750 g apples
3 tablespoons lemon juice
cinnamon
apricot marmalade
Knead together a shortcrust pastry of flour, sugar, butter, egg and salt. Cover with paper and refrigerate for
30 minutes. Heat oven to 200°C.
Roll out the pastry and press into pie dish.
Stick a hole in the pastry with a fork. Peel apples and remove seeds. Slice them into rings. Spread apples over the pie pastry and sprinkle with lemon juice.
Bake for about 30 minutes.
Remove pie from oven and let cool slightly. Sprinkle with cinnamon and ice with apricot marmalade that has been warmed in a pot to liquid form.
Cool in pie dish. Serve with vanilla ice cream.
