Strawberry muffins
8-10 big muffins
100 g butter
3 eggs
2.5 dl sugar
2 dl flour
1 teaspoon baking powder
25 strawberries
3 tablespoons lemon juice
Heat oven to 225°C. Melt the butter. Beat eggs and sugar together until they are light and fluffy. Mix baking powder into flour, pour cooled butter into the egg mixture and fold in the flour and baking powder. Fill baking cups with batter slightly more than half-full and put a strawberry in each cup. Bake for about 10 minutes.
Garnish with a strawberry before serving.
